Recipe of the week - Flank Steak Ropa Vieja

Ingredients

3 pounds flank steak

3 tablespoons extra-virgin olive oil

2 large onions, chopped

2 red bell peppers, chopped

2 tablespoons kosher salt

8 garlic cloves, finely chopped

½ cup dry red wine

4 teaspoons paprika

1 tablespoon dried oregano

2 teaspoons ground cumin

1 teaspoon ground black pepper

½ teaspoon cayenne pepper

(1) 28-ounce can crushed tomatoes

2 bay leaves

¾ cup Spanish olives, halved

2 teaspoons red wine vinegar

For serving : Chopped cilantro, tortillas, white rice, and black beans

Preparation

Step 1

Pat flank steak dry with paper towels. Rub with olive oil and season with salt, pepper, cumin, oregano, paprika, and cayenne pepper.

Step 2

Place steak in slow cooker with garlic, crushed tomatoes, red wine, bell peppers, and onions.

Step 3

Cook for 8 hours on low

Step 4

Skim excess fat from sauce; discard bay leaves. Using 2 forks, tear and smash beef into sauce until it’s shredded and incorporated into sauce. Stir in olives and vinegar.

Step 5

Top with cilantro. Serve with tortillas, rice, and beans alongside.
